Zesty Grilled Boneless Pork Chops

Zesty grilled boneless pork chops are pork chops marinated in salsa, marmalade, water, and seasoned salt. Chops are grilled over high heat.

Ingredients -
4 Boneless Pork Chops, 1/2-inch thick
1/2 cup thick and chunky Salsa
4 tablespoons Orange Marmalade
4 tablespoons Water
1/2 teaspoon Seasoned Salt
 
Preparation:

1. Combine salsa, marmalade, water, and seasoned salt in a medium bowl.

2. Place pork chops in a zip-lock plastic bag. Pour half of marinade over chops.

3. Seal bag and marinate in refrigerator 1 hour. Turn occasionally.

4. Preheat grill to medium heat.

5. Remove pork chops from zip-lock bag. Discard used marinade.

6. Grill chops over direct heat 4-6 minutes per side. Baste with remaining marinade.

Fresh Homemade Salsa

In a medium-size bowl, combine 3 seeded and chopped medium vine ripened tomatoes, 1/2 small chopped red onion, 1 minced clove garlic, 1/2 fresh seeded, and finely chopped jalapeno pepper. Stir in the 1 tablespoon red wine vinegar, 2 teaspoons lime juice, 2 teaspoons olive oil, and red 1/4 teaspoon hot red pepper sauce. Cover and chill in the refrigerator at least 2 hours before serving.

Storing Raw Pork

Store raw pork chops on the bottom shelf of the refrigerator to avoid the chance of juices dripping onto other foods. Keep pork wrapped in original wrapping and place in a shallow dish to catch any leakage.
