Easy Pork Chop Recipe


 
 

Stuffed Pork Chops

 
Pork chops marinated overnight in orange juice, vinegar, olive oil, bay leaves, allspice, and onion powder. Tenderized chops are stuffed with mincemeat, apples, and onions and baked a little more than an hour.
 
Ingredients -
 
4 Pork Loin Chops, cut 1-1/2 inch thick
1 (6 ounces) can Orange Juice Concentrate, thawed
1/4 cup Water
2 tablespoons Vinegar
1 tablespoon Olive Oil
2 Bay Leaves
1/2 teaspoon Allspice
1/4 teaspoon Onion Powder
1/2 cup Prepared Mincemeat
1/2 cup Apples, cored and finely chopped
1/4 cup finely chopped Onion
 
Preparation:
 
1. Preheat oven to 350 F.

2. Cut pocket in each pork chop.

3. Layer pork chops in shallow casserole or baking dish.

4. Combine orange juice concentrate, water, vinegar, olive oil, bay leaves, allspice, and onion powder in saucepan.

5. Bring to a boil over medium-high heat

6. Reduce heat to low and simmer 1 minute.

7. Pour orange mixture over pork chops, cover and refrigerate overnight.

8. Combine mincemeat, apples, and onion.

9. Remove pork chops from marinade, reserving marinade.

10. Stuff each pork chop with mincemeat mixture.

11. Secure edges of each pork chop with toothpicks.

12. Bake pork chops 1 hour or until pork chops have cooked through and juices run clear.

Prepared Mincemeat
Mincemeat can me made from scrath or purchased at your local supermaket. It is essentially, dried fruits combined with spices, and distilled spirits.
