Grilled Cajun Pork Chops

Cajun pork chop recipe that is well worth the effort. Pork chops rubbed with paprika, cumin, cayenne pepper, allspice, salt, and light brown sugar mixture. Pork chops grilled over direct heat, and served with rice, kidney beans, corn, and green onions.

Ingredients -
Cajun Rub:
3 tablespoons Paprika
1 teaspoon Cumin
1 teaspoon Cayenne Pepper
1 teaspoon Allspice
1-1/2 teaspoons Salt
2 tablespoons Light Brown Sugar

Pork And Rice:
6 center cut Boneless Pork Chops
2 cups Long Grain White Rice
1 (15 ounces) can Kidney Beans
1 (10 ounces) package Frozen Corn, thawed
3 Green Onions, sliced
 
Preparation:

Cajun Rub:
1. Combine paprika, cayenne pepper, cumin, allspice, salt, and light brown sugar.

2. Reserve 1 teaspoon rub.

Pork and Rice:
1. Dust remaining rub on both sides of pork chops. Set chops aside for 20 minutes.

2. Preheat grill to medium heat.

3. In a large saucepan, bring 4 cups water to boil.

4. Add rice to water. Stir in remaining rub.

5. Cover and simmer approximately 20 minutes.

6. Drain kidney beans into strainer. Rinse beans in cold water.

7. Add beans, corn and green onions to rice.

8. Cover and cook additional 5 minutes.

9. Grill pork chops 7-10 minutes per side, or until done.

Allspice is a combination of nutmeg, clove, ginger and cinnamon. You can substitute with for allspice, by making your own.

For best results preheat the grill to the proper temperature and place the grill rack over the hot coal or gas to preheat as well. Placing pork chops over high heat sears the pork chop, locking in flavor and moisture.
