Crunchy Pecan Pork Chops

Loin cut pork chops are brushed with mustard sauce and rolled in pecan, breadcrumb mixture. Pork chops are broiled turned and broiled until done. Very good pork chop recipe.

Ingredients -
6 Loin Pork Chops, 3/4 inch thick
2 tablespoons Dijon Mustard
2 tablespoons Mayonnaise
1 tablespoon Vegetable Oil
1/2 cup chopped Pecans
1 slice Bread, torn into pieces
1/2 teaspoon Salt
3 sprigs Fresh Parsley
 
Preparation:

1. Combine mustard, mayonnaise, and oil.

2. Place pecans, breadcrumbs, salt and parsley in blender or food processor. Pulse until pecans are finely chopped.

3. Set oven to broil.

4. Spread mustard mixture over pork chops.

5. Coat chops with pecan mixture.

6. Line broiler pan with foil.

7. Broil 10 minutes, chops 5-6” from broiler. Turn chops; broil another 10-12 minutes, until pork is cooked through till done.

Bread

Bread should sit out on kitchen counter or other area to dry out, preferably overnight. Turn once or twice.
