Cranberry Pork Chops

Seasoned pork chops browned and baked in cranberry, diced apple, and sugar salsa. Perfect holiday recipe for using up fresh cranberries.

Ingredients -
4 Pork Chops, about 1-inch thick
1 tablespoon Vegetable Oil
1/4 cup chopped Onion
1/8 teaspoon Poultry Seasoning
Salt, to taste
Fresh Ground Black Pepper, to taste
1 cup Chicken Broth
1-1/2 cups Fresh Cranberries
1 Apple, peeled, cored, and diced
1/2 cup Sugar
1/4 cup Water
 
Preparation:

1. Preheat oven to 350° F.

2. Heat oil in skillet over medium heat.

3. Add pork chops and brown 2 minutes per side.

4. Place pork chops in a large casserole or baking dish.

5. Season pork chops with onion, poultry seasoning, salt and pepper.

6. Add chicken broth.

7. Cover and bake 30 minutes.

8. In a medium-mixing bowl, combine cranberries, diced apple, sugar, and ¼ cup water.

9. Remove pork chops from oven. Spoon fruit mixture over chops.

10. Return pork chops to oven. Bake 20 minutes or until chops are tender and cooked through.

Pork Chop Tips -
Poultry Seasoning

If you do not have poultry seasoning on hand, mix 1/4 teaspoon ground thyme with 3/4 teaspoon ground sage.

Never Over Stuff Pork Chops

Never over stuff the pork chops as the stuffing will expand during cooking and leak out. Wait until just prior to cooking to add stuffing to prepared pork chops.
