Blue Cheese, Bacon, And Chive Stuffed Pork Chops

 
Butterflied pork chops stuff with blue cheese, bacon, and chives, baked and garnished with parsley. A simple, yet very gourmet entree.
 
Ingredients -
 
2 Boneless Pork Loin Chops, butterflied
4 ounces Crumbled Blue Cheese
2 tablespoons chopped Fresh Chives
2 slices Bacon, cooked and crumbled
Ground Black Pepper, to taste
chopped Fresh Parsley for garnish
 
Preparation:
 
1. Preheat the oven to 325 F.

2. In a small bowl, combine blue cheese, chives, and bacon.

3. Place an equal amount of blue cheese mixture into each pork chop.

4. Close shops and secure with toothpicks.

5. Season each chop with pepper.

6. Place chops in a greased or non-stick baking dish.

7. Bake 20 minutes, or longer, depending on thickness of pork chops.

8. Garnish with parsley.

9. Serve hot.
