| 1. Combine the olive oil, garlic, soy sauce, mustard, and salt and pepper.
2. Brush marinade over pork chops to make sure chops are evenly coated.
3. Refrigerate overnight.
4. Preheat grill to medium heat.
5. Grill chops directly over heat, and depending on thickness from 5 to 8 minutes per side.
6. Allow chops to rest a few minutes before serving.
